Easy Recipes for Your Busy Schedule

Spinach Artichoke Chicken Pasta Skillet

Serving size: 4 to 6 | Prep time: 5 minutes | Cook time: 45 minutes | Total time: 55 minutes
INGREDIENTS:
  • 1 to 2 Tyson Frozen Chicken Breasts
  • 1 Tbsp. olive oil
  • 2 Tbsp. + ½ cup chicken stock, divided
  • ½ Tbsp. butter
  • 8 oz. fresh spinach
  • ¼ tsp. salt
  • Pinch black pepper
  • 12 oz. jar marinated artichoke hearts, drained
  • 10 oz. farfalle pasta, cooked
  • 20 oz. jar Alfredo sauce
  • 1 Tbsp. fresh parsely, roughly chopped
  • ½ Cup shredded parmesan cheese
Directions:
  1. In an ovenproof skillet, combine olive oil, ¼ cup chicken stock, & frozen chicken. Season with salt and pepper.
  2. Cover & cook over medium heat for 30-35 minutes, turning occasionally until chicken reaches 170˚F internally. If liquid evaporates before chicken is done cooking, add more chicken stock.
  3. Remove chicken from pan & set aside. If liquid remains in the pan, add butter & spinach. If no liquid remains, add 1-2 tablespoons chicken stock then add butter & spinach. Season with salt & pepper.
  4. Cook for about 5 minutes over medium heat, then add artichoke hearts, cooked pasta, and Alfredo sauce. Stir until combined. Cook over medium heat 3-5 minutes until all ingredients are warmed.
  5. Slice chicken and place on top of pasta. Lightly cover with cheese.
  6. Broil in oven 3-5 minutes until cheese is melted. Garnish with parsley and serve.

Chicken tender and Mushroom Marsala

Serving size: 4 | Prep time: 10 minutes | Cook time: 15 minutes | Total time: 25 minutes
INGREDIENTS:
  • 6-8 Tyson Frozen Chicken Breast Tenderloins
  • 1 Tbsp. olive oil
  • 2 Tbsp. chicken stock
  • ½ package linguini
  • 4 cloves garlic, minced
  • ½ cup Marsala wine
  • 1 ½ cups sliced portabella mushrooms
  • 1 Tbsp. butter
  • ½ tsp. thyme
  • Salt + pepper to taste
  • ¼ cup shredded parmesan
  • Fresh parsley for garnish
Directions:
  1. In sauté pan with heat off add olive oil and chicken stock. Add chicken and season with salt and pepper. Cook for 15 to 20 minutes turning once.
  2. While chicken is cooking boil water and cook pasta according to package instructions.
  3. After chicken is cooked and reaches an internal temperature of 170°F add garlic to pan and cook until fragrant or for about a minute. Add mushrooms and cook until they appear to soften, 2 to 3 minutes.
  4. Add Marsala wine and thyme, allow to simmer for 2 to 3 minutes or until sauce appears to reduce and thicken. Add butter last.
  5. Strain pasta and add to sauté pan, toss all ingredients until pasta is well coated. Season to taste with salt and pepper.
  6. Serve and top with shredded parmesan and fresh parsley.
